Fairygarten Shiraz is a red wine made from Shiraz grapes from Jauma in McLaren Vale. The grapes are vinified with whole cluster carbonic macerationwithout additives, clarification or filtration. Matured in wood, not first passage. Dark berries, pepper and herbs on the nose, spicy and pungent in the mouth. It is one of the very few wines I have ever tried that goes resoundingly well with artichokes

🛁 After being harvested at the same time, the two grapes are vinified together in whole bunches in carbonic maceration. Matured in 320-litre used wooden barrels.
👃🏻 The nose is an explosion of blackcurrants, blackberries, pepper and thyme
👅 Crisp and fresh, compulsive sip, slightly peppery
👍🏻 Serving temperature 16°.

He then returned to Australia to study oenology and became a winemaker founding his Jauma winery, a wonderful 1867 structure built of sandstone.
Erskine works together with Fiona Wood, an expert in natural viticulture.
