Thousand Fires Chenin Arneis is a white wine made from Chenin Blanc and Arneis by Jauma in McLaren Vale. The grapes ferment spontaneously with indigenous yeasts and have different maceration times; then pressed, thehe wine is only made in steel, where it matures for 6 months and is then bottled with a homeopathic dose of sulphur dioxide only when needed. Lots of fruit on the nose with hints of honey and herbs, in the mouth it is fresh and fun, playful! We recommend trying it with a white pizza stuffed with chicken salad

🛁 The grapes are destemmed and then spontaneously fermented in steel with indigenous yeasts and longer maceration for the Arneis than for the Chenin, which is pressed earlier. Matured for 6 months in steel and bottled without filtering or clarification but with a homeopathic dose of sulphur dioxide

He then returned to Australia to study oenology and became a winemaker founding his Jauma winery, a wonderful 1867 structure built of sandstone.
