Sato La Ferme de Sato les Nuages Pinot 2019

La Ferme de Sato les Nuages Pinot is a red wine produced by Sato Estate in Central Otago, New Zealand. It is made from pure Pinot Noir grapes from alluvial shale soil 300 metres above sea level. The 10% of them remain whole cluster, the mass ferments spontaneously with indigenous yeasts, the maceration is about a month in wood not of first passage. In the same container, the wine matures for about 10 months, finally in the bottle. The Ferme de Sato les Nuages Pinot is an exuberant wine with dense tannin and complex scents on the nose ranging from juniper to coffee. Try it with wagyu.

🛁 It is produced from Pinot Noir vines located on hillsides and characterised by alluvial schist soil. The 10% of the mass remains whole cluster, this ferments spontaneously with indigenous yeasts and macerates for about a month in wood not of first passage. Again in wood, the wine matures for about 10 months, then bottled and left to rest for a few more months.
