Domaine d'Auresan

Cassaigne, France The Domaine d'Aurensan was founded at the end of the 19th century and consists of 7 hectares on clay-limestone soil in Tenareze, Caissagne. The production process is carried out entirely by hand, from pruning to trellising, from harvesting to vinification, following the principle of the least possible human intervention. The aim is to have grapes destined to produce labels of quality and longevity. The grapes are harvested when they are deemed ripe for distillation. That is, when they have a high acidity and a low sugar content, vinification takes place with the sole use of indigenous yeasts and without the addition of sulphites. The humidity in the cellar is perfect for a long and deep ageing process, here the classic 420-litre pieces (Armagnac barrels) are used. These are obtained from oak wood and made in-house. This ageing process is considered necessary for the Armagnacs of Domaine d'Aurensan to acquire their inimitable aromaticity. The bottles are all numbered, all TRIPLE ZERO: Zero dilution, zero sugar, zero colouring
