Zibibbo in Pithos è un vino bianco secco prodotto da Azienda Agricola Cos a Vittoria, in Sicilia, ed ottenuto da Zibibbo (Moscato d’Alessandria) in purezza. Le uve provengo da suoli rossi e calcarei, vengono vendemmiate manualmente e lasciate fermentare in maniera spontanea con lieviti indigeni ed una lunghissima macerazione (7 mesi) in anfore di terracotta da 400 litri. Successivamente vengono spostate per almeno altri 3 mesi ad affinare in cemento. Zibibbo in Pithos ha un naso magico fatto di note floreali e sfumature di frutta tropicale ed erbe aromatiche. In bocca è secco, fresco e dinamico, salino e persistente, da provare con un primo a base di pesto di pistacchio

They profess the Biodynamic "faith" and minimal intervention in the vineyard.
Theirs is also very interesting with the Spanish amphorae purchased 20 years ago
